Why would you edit in 16-bit instead of 8-bit?

Can you recover detail from completely blown-out highlights?
If the sensor recorded pure white with no data, there is nothing to recover. Highlights that appear blown but retain some information in the raw file can often be pulled back using exposure or highlight sliders. Shooting raw rather than JPEG gives you the best chance, as JPEG processing clips data earlier in the pipeline.
What does clipping the histogram actually do to an image?
Clipping means tones have been pushed beyond pure black or pure white, losing all detail in those areas.
